Sausage and Spinach Stuffed Shells


Sausage and Spinach Stuffed Shells
Ingredients :
1 lb Italian Sausage (or cooked chicken)
1 Onion, chopped
1 cup Mozzarella, shredded
1/2 cup Parmesan (optional)
1 box Jumbo Pasta Shells, Cooked according to the package
2 cans of Spaghetti Sauce (HERE's a spicy homemade recipe if you need one)
2 cloves Garlic, minced
1 bag of Spinach
2 lbs Ricotta Cheese (cottage cheese works too)
Directions :
Brown the Sausage with Onion and Garlic, drain
Cook the Spinach in 1 cup of water until soft and wilted
Drain and squeeze out the water, then chop the spinach
Mix the Sausage, Spinach, Ricotta, 1/2 Mozzarella and Parmesan Cheese together
Fill each large pasta shell with the mixture
Spread half of spaghetti sauce into prepared baking dishes. Arrange shells over sauce; top with remaining sauce. Cover tightly with heavy-duty aluminum foil. If you are freezing one of the 9x13 prepared pans, freeze it after this step. Include a baggy of the remaining mozzarella for when you cook it.
Bake, Covered, for 40 minutes at 350.
Uncover, sprinkle the rest of the cheese on top and bake for another 5-10 minutes until the cheese is melted.
Serve and enjoy!
