Farmer Casserole Ingredients :
6 c diced potatoes (I used Simply Potatoes diced potatoes with onion)1 tbsp extra virgin olive oil1 1/2 c reduced fat Colby & Monterrey blend cheese, shredded6 slices Canadian bacon, diced2 sliced green onions24 oz. (2 cans) fat-free evaporated milk2 c Egg Beaters egg substitute1/4 tsp salt1/4 tsp black pepper
