Homemade green chili and pork, and refried bean burrito
Homemade green chili and pork, and refried bean burrito. Yesterday’s dinner, I used Anaheim green chilies instead of tomatillo’s ❤😋😋
I roast and peel 6 Anaheim green chilies, chop them and set aside. Now in a skillet I heat enough oil to make a roux. In the oil I saute half of an onion diced, and 3 cloves of garlic chopped. Now add about a 1/4 cup of flour and whisk until the roux is light Brown. Now add 2 cups of chicken broth and your chopped green chilies, 1 tsp of oregano, 1/2 tsp of ground cumin, whisk until smooth. I also added some slow cooked pork simmer for about 10 minutes. ( THE PORK IS OPTIONAL) I lightly fry a flour tortilla then fill with some refried beans, roll and top the burrito with your green chili sauce 😋
