Fried Corn on a Stick
Ingredients :
Batter
1 cup yellow cornmeal
1 cup all-purpose flour
1 1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/3 cup white sugar
4 teaspoons baking powder
1 egg - beaten slightly
1 cup milk
1/4 cup corn starch (to help the batter stick)
The rest of the stuff
3/4 gallon vegetable oil for frying
6 ears of corn on the cob – left whole or cut in half horizontally
Wooden Skewers
Directions :
Husk your corn, pull off threads, and cut ear in half (if preferred)
In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder.
Stir together eggs and milk and add to the dry ingredients. Mix well (batter should be a little lumpy)
Preheat oil in a deep saucepan over medium heat. Insert wooden skewers into Corn.
Roll the Corn in cornstarch then in Batter until well coated
Fry 2 or 3 ears at a time until lightly browned, about 3 minutes. Drain on paper towels.
